What a view to wake up to each morning!

After a relaxing breakfast we straightened up the RV, went for a walk and then headed to the pool. It felt so nice to be in the sun and simply relax. And that is what we did ALL day. It was glorious!





Betsie was able to take school pool side and catch some rays in between classes and on breaks. Sounds like a win win to me!

On our last RV trip I did an end of the trip survey of each member of our “crew”. One question I asked what was their favorite dinner on the RV. The first night we arrived we had Anna Cate’s favorite which was turkey burgers and homemade potato fries. Last night we ate Will’s favorite dinner which was grilled salmon with a mango salsa and our favorite fresh fruit salad. For dessert I surprised the kids and made apple pie bombs. They were amazing! However, I didn’t have a rolling pin so I had to improvise.
Immediately I went back to Thanksgiving 1998. It was our first Thanksgiving as a married couple (two months married) and we were hosting. My mom was supposed to help me make the pies as I grew up in an Italian family so you make your crust from scratch (let’s just say that shipped has sailed for the most part). Two days before pie making day, my mom had to fly to Connecticut as my grandmother was sick. I said no worries, I can read instructions and make the pies. And I did and they turned out great! However, apparently a rolling pin never made it on our registry list and we didn’t own one. In the middle of that pie baking day, home alone, I decided the next best thing was a beer can. That little trick almost 22 years ago proved to work again last night for our Apple Bombs!

Our first day in Naples was exactly what we wanted…calm and relaxing. And of course Will held a few office hours as well!
